I just recently found this yummy recipe, it dissapears so fast, it's like magic!

Pumpkin Spice Cake

4 eggs
2 cups sugar
1/2 vegetable oil
1/2 unsweetened applesauce
1 15oz. can pure pumpkin - NOT pumpkin pie mix
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon pumpkin pie spice
1 cup chopped walnuts


Heat oven to 350 degrees. Lightly spray 11 X 8 inch cake pan with cooking spray OR grease with shortening and dust with flour.

In a large mixing bowl, combine the eggs, sugar, oil, applesauce and pumpkin. Blend on low speed until smooth.

Stir in flour, baking powder, baking soda, salt, cinnamon and pumpkin pie spice. Blend on medium speed until well blended. Fold in nuts with a spatula. Spread into prepared pan, batter is quite thick.

Bake at 350 degree for 25-30 minutes. Cool on wire rack 2 hours. Frost as follows:

Cinnamon Buttercream Frosting

1 cup shortening { Crisco }
1 pound powdered sugar - 4 cups
1/4 teaspoon salt
4-5 tablespoons water
1 teaspoon cinnamon
1 teaspoon clear vanilla extract
1 tablespoon Meringue Powder - look for this with Wilton cake stuff at places like Wal-Mart & Michaels

Cream together shortening, flavoring and meringue powder. Add powdered sugar. Add water, 1 tablespon at a time until smooth and creamy. Add cinnamon. Frost cooled cake generously. Leftover frosting can be placed in an airtight container and refrigerated for 2 weeks.

the frosting and the cold weather is making me think home made pumpkin cinnamon rolls with some cinnamon butter or cream cheese icing...ok im done lol
this lokks great, i will be giving this a go for a friends thankgiving birthday :!: :!: :) :)
