Here's a new pumpkin recipe I tried out this year and it was a quite yummy so I thought I'd share.
Pumpkin Muffins
3/4 c. firmly packed brown sugar
1/2 c. butter or margarine
1/4 c. molasses
1 egg, beaten
1 c. pumpkin mash
1 3/4 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/2 c. pecans or raisins (optional - I used pecans)
Preheat oven to 350 F (177 C).
Combine sugar, butter and molasses and beat well. Add egg and pumpkin mash, beating until smooth. Stir together remaining ingredients (batter may be lumpy).
Lightly grease muffin tins. Fill each cup half full of batter. Optional: Add a whole pecan nut to the top for decorational purposes. Bake for 20 mins. or until toothpick teaster comes out clean when inserted into muffin center.
I found that using a normal-sized muffin tin and generous amounts of batter in each cup, I got about a 1.5 dozen muffins from this recipe. They also stayed super moist - yummy!
