Is that like shaving your back?

Did this have anything to do with carving on the back of the pumpkin so that the image projects onto the wall?

No, not projecting...

his jack-o-lantern was really detailed...could he have been talking about cutting away a bit more of the pumpkin from the inside to open up the design to let more light through?

is part of the sculpting technique, cut outs give you 2 color options sculpting cuts out, leaves some in and then peels the skin away giving you 3 color options back carving is from the inside scraping the flesh away until you get to the skin and just leaving the skin, giving you a 4 color pattern very very detailed, never tried sculpting but know about it, seems very time consuming but you can have amazing detail with these sculpting techniques. some i've seen look like actual photographs
