Instead of Vaseline, one thing we tried last year was spraying the exposed pumpkin surfaces with a think coating of PAM. It seems to accomplish the same thing without the mess. I think any oil-based spray product will keep the oxidation at bay long enough.
I won my first pumpkin carving contest with the clock years ago. That one is a bear...a guaranteed series of hand cramps. However, it is beautiful when it's done.

There's an old saying that goes, "the juice isn't worth the squeeze!" That's my feeling about trying to remove the shell to get to the meat inside the pumpkin seed. The shell is perfectly crunchy and edible. It's good roughage and I've eaten them for years.
I have used these on pumpkins for a couple of years now and they work great. Yes, there is a bit of a mess factor as there is some back spray, but do it outside and who cares? Also, if you have a Costco near you, they have an off-brand Dremel like tool with a ton of attachments for about $25 or so. ...
