i dontquite know why but i tend to do more angled cuts than your average in and out cut thats straight as a pin any help on solving this issue

Which tools are you using? ..bendy blades probably resulting in curvey cuts.

I use a (few) of Ryans sets of pumpkin carving knives & then if needed use an xacto knife type set.

Good results, invest in a set they're very comfy for carve-athons!
